Jo's Favourite Recipes
Jo had two recipes,
Gunge, a sort of oat cake,
and Fisherman's pie, that were particular favourites of her and her friends. We thought it would be nice if we shared
them with you. We are sure that Jo would have wanted you to try them.
Jo's Gunge
- Makes 12-16
- Ingredients:

- 225g self raising flour
- 225g rolled oats
- 1 tsp bicarbonate of soda
- 225g butter
- 225 g sugar
- 2 tblsp golden syrup
- 2 dessert apples, peeled, cored and finely chopped
- 110g raisins
- You'll need a square tin, 23cm, greased and lined.
- Preheat the oven to 180 degrees C/350 degrees F/gas4.
- Mix the flour, oats and bicarbonate of soda together.
- Melt the butter, sugar and golden syrup together in a small saucepan over a gentle heat and add to the mixture.
- Press half the mixture into the tin.
- Mix the apple with the raisins and sprinkle over, then spread the remaining oat mixture on top.
- Bake for 30 minutes, then leave to cool.

- Either cut into slices and serve, or cut slices as required (depends how many guests you have!).
